Riley's Lime Cordial

My younger sister Riley was picking limes from our lime tree, and decided to research how to make lime juice. She found this recipe at http://www.healthyfood.co.nz/recipes/2008/january/fresh-lime-cordial and really likes it. She has used this recipe many time, and it is delicious.

Here's the recipe:

1 Cup of castor sugar
1 cup of water
1 Stick of lemongrass, white part only, bruised
4 strips lime zest
1 cup of freshly squeezed lime juice (about 8-10 limes)

Step 1: In a small saucepan, heat sugar and water over low heat and stir until sugar is dissolved. Add lemongrass and lime zest and bring to the boil. Simmer for 5 minutes. Remove from heat and cool. Strain, then mix lime juice with syrup.
Step 2: To make up a non-alcoholic drink, mix 1 part cordial to 4 parts cold water or mineral water.
Step 3: To add some festive cheer, mix in 3 teaspoons of tequila to every 2 tablespoons (40ml) cordial and 2/3 cup (160ml) water. For 4 people, mix 2/3 cup cordial with 2 2/3 cups water and 1/4 cup of tequila.

Hope you like it :)
